Chef Nazim: Country Scones

Country Scones


¾ cup dried currants or raisins
2 cups all-purpose flour
3 tablespoons sugar
2 teaspoons baking powder
½ teaspoon baking soda
¾ teaspoon salt
5 tablespoons cold butter
1 cup sour cream
2 egg yolks


1 egg white
1 teaspoon sugar


Rehydrate the currants in a bowl. Drain well. In a bowl combine the flour, sugar, baking powder, baking soda and salt. Then add the butter until mixture is crumbly. In a separate bowl, combine sour cream and egg yolk, then add to the crumb mixture. Put the dough on a floured surface and knead gently for 8 minutes. Roll the dough in 9-inch circle. Cut into your desired shape. Beat egg white with sugar and brush on top. Bake it for 15-18 minutes in at 400 degrees until golden brown. Dust it with cinnamon sugar.
