What's For Lunch Wednesday: Kielbasa Sandwich

1 Kielbasa, split open
1 red onion, diced
1 Granny Smith apple, diced
2 c. red wine
2 c. white wine
1/2 c. grape juice
1 red pepper, roasted & diced
2 c. mayonnaise
1 sandwich roll, hoagie style

Dice your onion and apple finely. Add the onion to a hot saute pan. Repeat this with the apple in a different pan. Once both are softened, add the red wine to the onion and the white wine to the apple, as well as the grape juice. Allow this to reduce until almost dry. Remove from heat and reserve. Meanwhile, add your kielbasa to the hot grill and cook about 3-4 minutes per side, until warmed through.

Mix your red peppers and mayo together until combined well, then spread on the toasted roll. Saute the sauerkraut until warmed through, then add sausage, apples, onion, and sauerkraut to the roll and top.
