What's For Lunch Wednesday: Southwest Chicken Salad

1 lb. pulled cooked chicken breast meat (BBQ style)
2 c. mayonnaise
1/3 c. whole grain mustard
2 Tbsp. Dijon mustard
1 bunch scallions, sliced thinly
1 can chipotle peppers in adobo sauce, pureed
1 tsp. apple cider vinegar
salt and pepper to taste

First, pull the chicken meat apart and make sure there are no large pieces. Reserve the meat. In a separate bowl, combine the mayo, mustards, cider vinegar, scallions and pepper puree. Mix well. Add in the chicken and mix well. Season to taste with salt and pepper. This recipe is terrific with potato rolls or even in a tortilla wrap! Can't go wrong with a classic sandwich with tomato and lettuce either. This is now available all the time at 202 Market!
