202 Market's Executive Chef Justin Hitt joined us this morning, and here is his Sesame Chicken Salad Recipe:
Sesame Chicken Salad
For the marinade and dressing:
1 c canola oil
3 tsp sesame oil
1/2 c rice wine vinegar
1 tsp Dijon mustard
1 boneless chicken breast, marinated, grilled, sliced Arugula and spinach Sliced shiitake mushrooms Finely sliced red onion White and Black sesame seeds for garnish
Combine the liquid ingredients and reserve a portion for dressing the finished dish. Marinate the chicken at least 2 hours, preferably overnight in the dressing mix. Remove in the morning and discard marinade. Grill the chicken off and finish in the oven until cooked thoroughly. Mix the arugula and spinach, then toss in the dressing mix. Sprinkle the mushrooms and onion, as well as the sesame seeds over top. Then, drizzle the reserved dressing over the salad and enjoy.
This salad also works well with citrus fruits, as well as fish. Add some crushed Ramen noodles to the top for some extra crunch!
