What's for Lunch Wednesday: Pasta & Chicken With Florentine Sauce

1 chicken breast, grilled and sliced

Any pasta of your choice

Cherry tomatoes, halved

1 C fresh spinach

1 clove of garlic, minced

4 Tbsp. whole unsalted butter

2 Tbsp. white wine

1 Tsp. lemon juice

1 white onion, slivered and caramelized

3 Tbsp. goat cheese

7 Oz. chicken stock

Salt and pepper to taste

First, grill the chicken breast and finish cooking in a 350 degree oven, about 5-6 minutes. Peel and slice thinly the white onion and caramelize in a pan over medium-low heat. The onions will be a fairly dark brown color with a very strong sweet smell. While the chicken is cooking, add the garlic, butter, wine, lemon juice, and chicken stock to a saute pan over high heat. Reduce this for about 1 minute, then add the tomatoes and onions. Continue reducing the liquid until about 4-5 Tbsp remains. Then add the spinach and toss. Remove the sauce from heat and swirl in 1/2 Tsp. butter. Then add the cooked pasta, slice the chicken and top with the goat cheese. Serve and enjoy!
