Chef Tom: Jacob's Cheesy Mac and Cheese

Jacob's Cheesy Mac and Cheese

*1 pound tube pasta, cooked
10 oz apple wood smoked bacon. Cooked and chopped
*2 -3 oz crumbled aged bleu cheese
*2-3 oz shredded asiago cheese
*½ pound cubed processed American cheese
1 can fire roasted tomatoes, drained
3 cup heavy cream
Salt, pepper, and nutmeg to taste
4 tablespoon melted butter or margarine
½ cup panko bread crumbs

Preheat oven to 350

In salted boiling water cook pasta for 7 minutes. Combine pasta, bacon cheese and tomatoes in a baking dish coated with non-stick spray. Stir in cream. Season with salt, pepper and nutmeg to taste. Combine butter and bread crumbs and sprinkle on top of pasta. Bake in preheated oven for 30 minute, or until bubbly and browned.

*Note: You can use any shape of tube pasta. You can also use either parmesan or romano cheese, or combination of cheeses.
