Blacksburg Blonde Brownies
•1 cup sifted all-purpose flour
•1/2 teaspoon baking powder
•1/8 teaspoon baking soda
•1/2 teaspoon salt
•1/2 cup chopped black walnuts
•1/3 cup butter, melted
•1 cup packed brown sugar
•1/2 tsp of cinnamon
•1 egg, beaten
•1 tablespoon vanilla extract
•1/2-1 cup semisweet chocolate chips
1. Preheat oven to 350 degrees F (180 degrees C). Grease a 9x9-inch baking pan.
2. Measure 1 cup sifted flour. Add baking powder, cinnamon, baking soda, and salt. Sift
again. Add 1/2 cup chopped nuts. Mix well and set aside.
3. Stir the brown sugar into the melted butter and mix well. Cool slightly.
4. Mix the beaten egg and vanilla into the brown sugar mixture. Add flour mixture, a little at
a time, mixing just until combined.
5. Spread the batter into the prepared pan. Sprinkle 1/2 to 1 cup chocolate chips on top.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, about
20 to 25 minutes.
Coach Beamer Baked Potatoes
•4 medium Idaho baking potatoes, scrubbed
•4 ounces cream cheese, room temperature
•½ cup Greek yogurt
•8 ounces shredded cheddar
•4 slices peppered bacon, cooked and crumbled *optional
•3 tablespoons finely chopped green onions
•4 tablespoons butter, melted
1. Preheat to 375°F. Poke each potato a several times with a fork and place directly on the
rack. Bake until skin just starts to crisp and flesh is soft, about 1 hour. Remove from
oven. (don't wrap in foil!)
2. When cool enough to handle, slice potatoes in half. Scoop out interior into a medium
bowl, leaving a ¼-inch layer of flesh. Add cream cheese and yogurt and beat with a handheld
mixer until thoroughly combined and fluffy, about 30 seconds. Fold in rest of
ingredients.. Season with salt, to taste.
3. Wrap in foil wrap. Four outdoor grill. Place on grill for 5-7 minutes until warm. For indoor
cooking, put back in oven at 375 for 5-10 minutes.
Cool and serve!
Enter Sandman Cider
2 teaspoons whole cloves
1 orange, thinly sliced
2 quarts apple cider
1/2 cup light brown sugar
1 pinch of ground ginger
1 teaspoon of cinnamon
Pinch grated nutmeg
1 cup dark rum
Stud the apple with the cloves. In a medium pot, combine the studded apple and remaining
ingredients except the rum. Slowly bring to a simmer over low heat. Simmer for 10 minutes.
Remove from the heat and add the rum.
Pour "Enter Sandman Cider" into mason jars and enjoy!
Hot Hokie Chicken Wrap With Guiltless Blue Cheese Dressing
2 tablespoons hot pepper sauce, such as Frank's RedHot
3 tablespoons white vinegar, divided
1/4 teaspoon cayenne pepper
2 teaspoons extra-virgin olive oil
1 pound chicken tenders
Add chicken to skillet with olive oil. Coat chicken then add remaining ingredients.

Guiltless Blue Cheese Dressing
Coop/prep time: 5 mins. Makes enough to dress about 4-6 salads.
•1/4 cup blue cheese finely chopped or in crumbles
•1/2 cup non-fat Greek yogurt
•Juice of 1/2 a lemon
•1 tablespoon white vinegar
•1/4 teaspoon salt
•Cracked black pepper to taste
•Sprinkle garlic powder
•Sprinkle onion powder
•Drizzle of honey or agave
Finely chop and then break apart blue cheese into small crumbles. Combine blue cheese,
Greek yogurt, lemon juice and vinegar in a bowl or jar and mix well. Add all seasonings
and a drizzle of agave or honey and stir well with fork until cheese is no longer clumping

Put chicken and dressing in wrap. Add lettuce, tomato. Wrap it and serve!
