Oven Roasted Smokey Cranberry Ribs
3-4 lbs pork or beef ribs
1 can (16 oz) jellied cranberry sauce
½ cup mesquite smoke marinade or hickory smoke barbecue sauce
1/3 cup chopped onion
Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine onions, Barbecue sauce and Cranberry sauce. Split ribs down the center between the bones. Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches. Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder. Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce by two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.
Dracula's Kiss Cocktail
3/4 cup passion fruit or mango juice
2 shots passion fruit vodka
1 shots Amaretta
Powder Tang for rim of glass
1 shot grenadine
In a saucer pour a small amount of juice. In a second saucer pour a thin layer of Tang. Take the glass and turn it upside down first in the juice and let drip off. Then lightly tap in Tang. In a small pitcher or 2 cup measuring cup combine the juice, vodka and liqueur. Divide evenly between 3 martini glasses. Hold a teaspoon measure upside down over the glass, slowly pour a shot of grenadine on top of the juice mixture so that is floats on top, creating a layered effect. Repeat with second drink and third drink.
Maple Chili Popcorn
8 cups popcorn (popped without salt or fat) $
1/2 cup maple syrup
1 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon ground red pepper
Preheat oven to 300°. Coat a 15 x 10-inch jelly-roll pan or other large rimmed baking pan with cooking spray. Place popcorn in a large metal or glass bowl lightly coated with cooking spray. Combine syrup, butter, salt, and pepper in a saucepan over medium heat. Bring to a boil, stirring just until combined. Cook, without stirring, for 2 minutes. Pour syrup mixture over popcorn in a steady stream, stirring to coat. Spread popcorn mixture in an even layer into prepared pan. Bake at 300° for 15 minutes. Remove from oven, and cool completely in pan.
Cheesy Zucchini Crisps
2 medium zucchini (about 1 pound total)
1 tablespoon olive oil
1/4 cup freshly grated Parmesan (3/4-ounce)
1/4 cup plain dry bread crumbs
1/8 teaspoon salt
freshly ground black pepper
Preheat the oven to 450 degrees F. Coat a baking sheet with cooking spray. Slice the zucchini into 1/4-inch thick rounds. In a medium bowl, toss the zucchini with the oil. In a small bowl, combine the Parmesan, bread crumbs, salt, and a few turns of pepper. Dip each round into the Parmesan mixture, coating it evenly on both sides, pressing the coating on to stick, and place in a single layer on the prepared baking sheet. Bake the zucchini rounds until browned and crisp, 25 to 30 minutes. Remove with spatula. Serve immediately.
