Italian Home Fries

4 medium potatoes, sliced
1/2 lb Italian sausage, or your favorite breakfast sausage
2 clove garlic, chopped
1/2 each - green bell pepper, red bell pepper, chopped
1/4 c fresh, chopped mushrooms (optional)
1 small onion, chopped
1/2 c shredded Italian 6-cheese blend, or whatever cheese you prefer
1/2 tsp paprika
pinch Italian seasoning
salt and pepper to taste
2 tbls olive oil

In a large skillet, saute the peppers, onions, garlic, mushrooms in enough oil that they won't stick. When soft and starting to brown; remove and drain on paper towel. In the same skillet; crumble and brown the sausage till no longer pink. Drain on paper towel. Add more oil to the pan. Add sliced potatoes, salt, pepper, paprika, Italian seasoning. (I sometimes leave the skin on the potatoes and par cook in the microwave for about 5 minutes). They cook much faster that way. And the starch makes them brown nicely. Continue cooking until potatoes are tender and getting brown. Add the crumbled sausage and veggies back to the skillet. Mix well. Sprinkle evenly with cheese, cover till cheese melts
