What's for Lunch Wednesday: Desserts

Orange liqueur cake

1 c. butter
1 c. sugar
1 tsp. Grand Marnier
2 c. flour
1 tsp baking powder
1 tsp baking soda
1 ¼ c. sour cream
1 orange, zested
3 egg whites
3 egg yolks

Cream butter and sugar together in a mixer. Beat yolks into mixture one at a time until fully incorporated. Sift together flour, baking powder, baking soda. Add in dry ingredients and sour cream, alternating between dry and sour cream. Add orange zest. Beat whites until stiff and fold into batter. Bake at 350F for 50-55 minutes.

Glaze

½ c. sugar
1 c. orange juice
1/3 c. Grand Marnier

Mix until thoroughly combined.

Frangelico crème anglaise

12 egg yolks
8 oz. sugar
1 qt. heavy cream
1 vanilla bean
1 shot frangelico

Combine 4 oz. sugar and egg yolks. Scald cream, vanilla, and remaining sugar. Temper cream into eggs and return to the pan. Bring to 180F or until it coats the back of a spoon. Quickly chill in an ice bath and add frangelico.

Honey gelato

2 c. heavy cream
2 c. milk
1/3 c. sugar
1/3 c. honey
1 vanilla bean
4 egg yolks

Heat milk, cream, honey, and vanilla to 190F. Temper into egg yolks and return to heat until it coats the back of a spoon. Chill in an ice bath. Spin according to your ice cream maker instructions.

Honey sesame tuiles

8 oz. butter, room temperature
2 c. confectioners sugar
½ c. honey
8 egg whites
2 c. flour
¼ c. sesame seeds

Combine everything in a mixer and mix until thoroughly combined. Shape using the back of a spoon. Sprinkle with sesame seeds. Bake at 300F for 8-10 minutes.
