De-Constructed Beef Wellington

2 - 8 oz beef filets
2 cups spinach, fresh
1 Tbsp whole butter
10 ea Yukon Gold potatoes
1 thin slice Prosciutto, cut in half
puff pastry
2 oz demi glace
2 oz duck liver pate (this can be purchased at a gourmet grocery store)
1 ea strawberry,sliced

Place cleaned potatoes in an oven safe dish, cover with kosher salt, wrap with aluminum foil and place in 350 degree oven for approx. 45 minutes or tender throughout. Once potatoes are done, remove and shake off the excess salt. Place thin sliced Prosciutto on a sheet pan lined with parchment paper and then place a sheet pan on top and place in oven at 350 degrees for about 20 minutes or until the Prosciutto is crispy. Season the filets with salt and pepper, place in a hot oiled saute pan or on a grill, cook to desired temperature. Place spinach in a saute pan over medium heat, season with salt and pepper and wilt. Add whole butter. Slice the pate and the strawberries and place them on plate alternating between the two. Place puff pastry on a cutting board and cut out circles the same size as the filet. Bake in oven until puff pastry starts to rise.
