Crab Cakes With Bacon Corn Chowder

Hotel Roanoke Signature Crabcake

3 cups mayonnaise
1 tablespoon dry mustard
2 tablespoons Worcestershire Sauce
1 teaspoon Tabasco
1 1/2 tablespoons garlic (granulated )
3 tablespoon Old Bay
2 tablespoon paprika
4 eggs
1/4 cup lemon juice
3/4 teaspoon black pepper
2 cup bread crumbs
5 pound crab meat

Mix all the wet ingredients well (mixing in the order listed will give you the best results). Add seasonings, then bread crumbs. LET REST FOR 15 to 20 MINUTES. Then fold in your crab meat

Bacon Corn Chowder

1 pound bacon
1 quart leeks
1 tablespoon garlic
1/2 cup flour
1 cup wine
1 quart heavy cream
2 cups corn

Cook bacon. Put bacon grease in heavy pot and saute the leeks and garlic. Add flour to leeks and garlic and stir until smooth like a roux. Add white wine and cream. Cook until thickened. Add corn, and crumble bacon into mixture.
