Lemon Green Beans with Walnuts and Do Nothing Cake

Lemon Green Beans with Walnuts

1/2 cup chopped walnuts
1 pound green beans, trimmed and cut into 2 inch pieces
2 1/2 tablespoons unsalted butter, melted
1 lemon, juiced and zested
salt and pepper to taste

Preheat oven to 375 degrees F (190 degrees C). Arrange nuts in a single layer on a baking sheet. Toast in the preheated oven until lightly browned, approximately 5 to 10 minutes. Place green beans in a steamer over 1 inch of boiling water, and cover. Steam for 8 to 10 minutes, or until tender, but still bright green. Place cooked beans in a large bowl, and toss with butter, lemon juice, and lemon zest. Season with salt and pepper. Transfer beans to a serving dish, and sprinkle with toasted walnuts. Serve immediately.

Do Nothing Cake

3 c sugar (2 cups separated from 1 cup)
2 c flour
2 eggs
1 tsp baking soda
2 tsp vanilla (separated)
16 oz crushed pineapple
1/2 c butter
3/4 c evaporated milk
1 c shredded coconut
1 c nuts (pecans or walnuts) chopped

In a bowl mix 2 cups sugar, flour, eggs, baking soda, 1 tsp vanilla, and crushed pineapple and mix well with a spoon. Pour into a greased 9x13 baking pan. Bake at 350 for 40 minutes. When your cake is finished baking and is still hot make your icing. Icing: Mix butter, 1 cup sugar, evaporated milk, and 1 tsp vanilla in a sauce pan. Cook over medium heat until it thickens. This usually takes about 5 minutes. Remove from heat and add the coconut and chopped nuts. Pour while hot over warm cake. Let cool.
