8oz Faroe Island Salmon

Cheddar Chive Grits
1/4 cup vegetable base
2 cup grits
2 tablespoon garlic
1/2 can roasted red peppers
2 cup cheddar cheese
1/3 cup chives
Bring 8 cups of water to a boil, add ¼ cup liquid vegetable consume, 2 tablespoons pureed or fine chopped garlic, ½ can roasted red bell peppers, julienne and 2 cups stone ground grits and stir. Reduce heat and cook at a very low simmer until soft, about 30 minutes.When cooked spread out on sheet pan to cool. Reheat to order in a low temp saute pan adding 2 tablespoons of shredded cheddar and 1 teaspoon of chopped fresh chives per one cup of cooked grits. Use hot vegetable stock to loosen, until hot and smooth. Yields: 15 1-cup servings

Apple Cucumber Salsa
2 Granny Smith apples, cored and chopped
½ large English cucumber, peeled, de-seeded and chopped
½ each red and yellow bell pepper, fine diced
3 tablespoons red onion, fine diced
1 tablespoons fresh mint, chopped
1 jalapeño pepper, seeded and very fine minced
1 tablespoon light brown sugar
¼ cup fresh lemon juice
2 tablespoons cider vinegar
1 tablespoon olive oil
salt and pepper to taste

Mix all ingredients and chill. Yields: 20 1/4-cup servings
