Chef Tom: Grilled Steak with Bleu Cheese, Bacon and Mushroom Cream Sauce
2 large steaks, your favorite cut salt and pepper to taste 1 tablespoon oil 2 tablespoon butter 2 clove garlic (chopped) 1 teaspoon thyme(chopped) 8 ounces mushroom (sliced) 4 slices crispy bacon (crumbled) ½ cup beef stock ¼ cup heavy cream 1 splash sherry ½ cup bleu cheese crumbled
Season steaks with salt and pepper. Heat grill to medium high heat. Add steaks and sear at high heat until done to your preference. Let the steaks rest in a heated oven until ready to eat. Melt butter in pan. Add garlic and thyme and sautee until fragrant, about a minute. Add mushrooms and season with salt and pepper and sautee until tender, about 7-9 minutes. Add broth, sherry and heavy cream and deglaze the pan and simmer until it has reduced by half. Remove from heat and stir in bleu cheese, pour over steaks and enjoy.
